Apulia is full of good restaurants of every type, but the best eating in the region may be found in the superb “trattorias” and casual restaurants with which virtually every town is populated, often in places where you least expect to find that ideal mix of unbelievably good simple food, enchanting surroundings, and good wine. Some example of the most interesting offering are: “orecchiette”, (little ears) the typical pasta of this region manually made with hard flour and water, pressed with a thumb to resemble little ears that catch and hold the pasta sauce; “ricci” (sea urchins) savored raw, flavored with a squeeze of lemon to underscore their briny flavor; “turcinieddhi” (offal) prepared with lamb's hearts, lights and intestines, skewered and cooked on a blazing grill, then eaten with raw celery and sharp sheep's milk cheese; “burrata”, (buttered) a small wet ball of cow's milk fresh mozzarella, filled with diced mozzarella soaked in cream; “ricotta forte” is a spicy sheep's milk ricotta (aged for a month), “scamorza”, a mild creamy cheeses that hang in ball and pear shapes in cheese shops; “polpi arriciati” (curled octopus).

Day 1 : Bari arrival / Trani / Andria
Arrival at Bari airport. Meet the assistant and transfer to Trani for a wine tasting with appetizers, followed by light lunch in a amazing restaurant. In early afternoon guided tour of the medieval Trani, known as the “Pearl of Puglia”. Visit to the historical center, with its traditional Renaissance architecture and the famous spectacular 13th Century Cathedrals overlooking the Adriatic Sea.. Move to Andria for a gelato, then reach the Masseria for check-in.
Welcome dinner and overnight.
Day 2: Altamura / Locorotondo
Breakfast and check-out. Transfer to Altamura for a fantastic bread making and tasting, then experience entering in a alimentary shop and learning them how to order some Puglia specialities. Transfer to Locorotondo to a charming “masseria”, check-in and lunch. Time to relax. In the early afternoon cheese making and tasting, followed by a olive oil tasting. Back to the Masseria, for an evening hands-on cooking class with dinner. Overnight.
Day 3: Alberobello / Martina Franca / Ostuni
Breakfast. Transfer to Alberobello for a guided stroll in the historical district. Transfer to Martina Franca for a guided visit to the Rococò village, followed by lunch in a renowned restaurant. Back home, with time to relax. In the evening guided visit to Ostuni, ”the white village”, strolling in the old district. Dinner in an elegant Masseria, based on vegetarian recipes. Back home and overnight.
Day 4: Monopoli / Conversano / Polignano a Mare / Cisternino
Breakfast. Transfer to Monopoli, for an amazing visit to the fish market followed by a tour of the city center. Continue for Conversano for lunch in a renowned restaurant, driving along a road that offers a wonderful view of countryside with the ocean, freckled by olive groves and trulli (visit of an olive grove around). Move to Polignano a Mare for a gelato and a pleasant tour of the old city. Back to the hotel and time to relax. Dinner at a "fornello" in Cisternino. Back home and overnight.
Day 5: Avetrana / Salice Salentino / Lecce
Breakfast and check out. Transfer to Avetrana, for an amazing olive oil tasting followed by a refined traditional cuisine lunch in a nice Masseria. In the afternoon guided visit of a winery for a wine tasting, in Salice Salentino, then move to Lecce for a free stroll in the city center. Delicious dinner in a typical “trattoria” and overnight in an elegant hotel in the hearth of the town.
Day 6: Corigliano d'Otranto / Maglie
Breakfast with local “pasticciotto” and check-out. Guided tour through the “Baroque capital”, ending with a rich ice-cream tasting. Transfer to Corigliano d’Otranto and check-in at the “Masseria”. Lunch in “trattoria”, based on local typical recipes. In the afternoon transfer to Maglie for a shopping in its trendy clothes shops. Back home for a special dinner with wine tasting, enriched by a pizzica music entertainment, and overnight
Day 7: Torre Vado / Santa Maria di Leuca / Salentine Adriatic Coast / Otranto
Breakfast. Transfert to Torre Vado for an amazing boat tour along the Ionian Coast with “sea urchins, mussels and seafood” lunch on board. In the early afternoon guided visit to Santa Maria di Leuca, the southernmost point of the region calles “Finibus Terrae”. Continue driving along Salentine Adriatic Coast to reach the oriental town of Otranto, for a stroll in the historical district and time for shopping. Dinner in restaurant overlooking the sea. Back to the Masseria and overnight.
Day 8: Departure
Breakfast and check out. Transfer to the Brindisi airport, for departure.
